I found this recipe for peanut butter chocolate cake and peanut butter frosting a few years back and thought it looked like it might be quite good. I took it to a Christmas dinner and it was quickly gone, I have since made it several times and the family has enjoyed it.
Peanut Butter Chocolate Cake
Ingredients:
- 2 cups flour
- 2 cups sugar
- 2/3 cup of baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 2/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 cup brewed coffee cooled to room temperature
Directions:
In a large mixing bowl combine the dry ingredients then add the eggs, milk, oil, and vanilla. Beat for 2 minutes and then stir in the coffee. Bake in a greased 9 x 13 pan and bake at 350 for 35 – 45 minutes. Cool completely on a wire rack and when cool frost with the peanut butter frosting.
Peanut Butter Frosting
Ingredients:
- 1 – 3 ounce package cream cheese
- 1/4 cup creamy peanut butter
- 2 cups powder sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla
- Miniature semi sweet chocolate chips for garnish (not many just enough to make it look good)
Directions:
Beat cream cheese and peanut butter until smooth. Beat in sugar, milk, and vanilla. Spread over cooled cake and sprinkle with chocolate chips. Store in the refrigerator.
