Recipe For The Best Peanut Butter Pie Ever

I had an Uncle that loved sweets, but he didn’t like peanut butter.  I always used to tempt him with peanut butter sandwiches and cookies etc.  His comment was always no way.  But when it came to my mom’s peanut butter pie he would say it looks good but I don’t think so.  I think it even tempted him when everyone would comment on how good it was.

Ingredients:

  • 1/2 cup of crunch peanut butter
  • 3/4 cup of powdered sugar
  • 1/2 cup sugar
  • 2 teaspoons of flour
  • 1/8 teaspoon of salt
  • 1 can of evaporated milk (regular size – not the real small one)
  • 2 eggs (beat them with a fork) and set them aside in a bowl
  • 2 Tablespoons of butter
  • 1/2 teaspoon of vanilla
  • 1 Tablespoon of coffee (optional but she usually puts it in)

Directions:

Bake your pie crust and have it cooled and ready.

Dredge the peanut butter and powdered sugar together and spread out all but 2 or 3 tablespoons into the bottom of your crust.  You will garnish the top with what you saved back.

Bring the sugar, flour, salt, coffe, and milk to a rapid boil and cook for 2 minutes. Then put the heat to low.

Gradually add some of the milk mixture into your bowl of beaten eggs and then back to the milk mixture stirring constantly.  (You don’t want to cook your eggs by just dumping them in the boiling mixture)

Cook for 5 minutes over the low heat.

Add the butter and vanilla and stir till the butter is melted.

Pour this over the peanut butter mixture that you already have in your baked pie crust.

Sprinkle the left over peanut butter mixture over the top of your pie.

Let it cool and serve.
