I have tried several carrot cake recipes and this is the one that I like to make the best, when it comes to carrot cakes you almost have to go with the homemade variety, the box versions don’t taste near as good as making it from scratch.
- 4 eggs
- 2 cups sugar
- 1 1/2 cup oil
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 3 cups finally grated carrots
Mix the eggs, sugar and oil together. Then after you have sifted the dry ingredients add them as well and beat the batter. Then gradually add in your carrots.
Bake in a 13 x 9 inch pan for 1 hour at 350 degrees.
Carrot Cake Icing
- 1 stick margarine
- 3 1/2 cups powdered sugar
- 8 ounces softened cream cheese
- 2 teaspoons vanilla
- 1/2 cup nuts (I prefer walnuts)
Beat all of the ingredients together and then frost your cooled cake with it.
