Rice A Roni Meatballs

This super flavorful meatball recipe is a family favorite. It takes less than 1/2 hour from start to finish and is only 3 ingredients. Serve it with a salad and it will feed a family of four easily.

Ingredients:

  • 2 Boxes of Beef Rice A Roni
  • 1 1/2 lbs of hamburger
  • 2 cups of water

Directions:

In a large bowl mix raw hamburger and the rice from one box of Rice a Roni.

Roll into meatballs and place in a large skillet, they can be tightly placed. I start on the edges and work my way to the middle.

Add two cups of water to the skillet.

Take seasoning packets from both boxes of Rice a Roni and sprinkle it over the top of the meatballs. Some will go into the water and that is fine. (Reserve the extra rice to use in a different recipe)

Cook on medium heat with the lid on for about 10 minutes. Remove lid and flip the meatballs over. Replace lid and cook for about 10 more minutes.

Remove lid and continue to cook on medium heat till most of the moisture is gone. Don’t cook it till dry as the rice on the bottom is full of flavor.
