I don’t know where my mom got her collection of recipes but she has some real jewels in her recipe box, one of the awesome ones that she passed on to me was her recipe for spice cake. Yum Yum, it is really good. Your friends and family will love it.
Ingredients:
- 2 sticks of margarine
- 2 cups sugar
- 2 eggs beaten
- 1 cup raisins
- 2 cups boiling water
- 2 teaspoons soda
- 1/2 teaspoon cloves
- 1/2 teaspoon allspice
- 3 teaspoons cinnamon
- 3 cups flour
- 1/2 teaspoon baking powder
- 1 cup nuts (I prefer walnuts)
Directions:
In a large saucepan add your margarine, sugar, eggs, raisins, and then pour over 2 cups of boiling water. Then add your soda, cloves, allspice, and cinnamon. Mix it well and bring it to a boil.
Let your mixture cool then add 3 cups of flour, 1/2 teaspoon of baking powder, and a cup of nuts. Mix well.
Bake it at 350 degrees for about 35 minutes, it should be beige in color when it is done.
How To Make the Glaze:
This cake really doesn’t need frosting but sometimes I like to put a thin glaze on it. I usually just mix up a little powdered sugar and milk and glaze it with that. I have also added a bit of maple flavoring to the glaze and that is especially good too.
