The Best Potato Salad

When it comes to potato salad recipes it gets a little difficult. Most people have their own and it is not anything wrote down, you just make it.

My mom makes the best though, in my opinion anyway, so one time when she made it I figured out all the measurements so I could actually have a recipe for it. I still like it but she makes it best. For some reason food always taste better when you didn’t have to make it!!

Ingredients:

  • 1 medium onion – finely chopped
  • 14 medium potatoes cooked with peelings on
  • 8 hard boiled eggs
  • 2 cups of miracle whip
  • 2 tablespoons mustard
  • 1/2 to 3/4 cup sweet pickle juice

Directions:

What makes this especially good is the way you prepare the potatoes. After you cook and peel them you put them through the shredding disc on the salad shooter. You also run the eggs through it too.

So in my bowl I have the eggs, potatoes, and onions. Then I mix up the “dressing” and then add it to the bowl and stir it in thoroughly and carefully.

Sometimes we hard-boil a few extra eggs and slice them up and garnish the top.
