You just got home from work. You’re tired. You’re running behind. You’re stressed as hell! All you really want to do is sit down and relax.

But you can’t…

You have a family to feed and still have dinner to make.

I know I’ve been there!

In my experience, all you really need is a recipe that is quick and easy to make with ingredients that you typically have on hand.

I like this Veg-All hamburger casserole recipe. It is my go-to recipe for when I am in a hurry and my family is hungry for a decently heavy meal.

I have also included a few tips and alternative ingredients for casseroles that you can explore for whole new flavors. Just in case you would like to changes things up a bit. One recipe for multiple styles of casseroles. You can’t go wrong with that!

Ingredients:

  • 2 pounds of hamburger
  • 1 onion (chopped)
  • 1 green pepper (chopped)
  • 2 cans of cream soup
  • 2 cans of veg-all
  • 1 can corn
  • 1 – 2 cups of shredded cheese for the topping
  • Salt and pepper to taste

Directions:

Brown the hamburger with the onions and green pepper.

Drain the grease from the hamburger if there is any.

Add the soup and vegetables and pour it all in your casserole dish.

Sprinkle the cheese on top and bake if for 20-30 minutes at 350 degrees. You just need to make sure it gets heated all the way through and the cheese gets melted.

Tips:

Don’t be afraid to add more seasoning. I normally add a little garlic and I have also added steak seasoning. Whatever sounds good is what I add.

I have found that you can use any cream soup. I have even used cream of chicken before and it works well. I haven’t tried it yet but I suspect you could use cream of tomato soup and change it up.

You can also customize what canned vegetables you want to put in it. If you only want corn and beans, then just put in corn and beans. I haven’t tried it but I don’t see why you can’t put in any frozen vegetables you want. If you have them on hand then throw them in.

If you like a stronger onion taste then chop your onions up a little finer and don’t cook them with the hamburger. Same with the green pepper (which you could leave out if you don’t like green peppers). This adds a little more crunch and texture.

If your family is a fan of mushrooms, use cream of mushroom soup and add fresh mushrooms to it. They go great in casseroles.

Convert this recipe to a chili and cheese casserole. Put in a chili packet or your own chili seasonings. Skip the veggies if you want but add chili beans and diced canned tomatoes.

Make it a taco casserole. Add taco seasonings, green chili’s, maybe even some jalapenos if you like it spicy. Add any vegetables you want. You could even open up a can of refried beans and put a layer of that at the bottom of your casserole pan.

If you are short on groceries and need it to stretch further then add some already cooked macaroni or noodles.
