When it comes to potato soup my mom’s potato soup recipe is the best I have ever had. I love the way the broth is cheesy but not overpoweringly so. We often have it for supper with some crackers and summer sausage on the side.
How To Make:
Ingredients:
- 3 cups diced potatoes
- 1 cup chopped onions
- 1 cup chopped celery
- 1/2 cup margarine or butter (melted)
- 1/2 cup flour
- 1 quart milk
- 3/4 cup shredded mild cheddar cheese
Directions:
- Place your potatoes, onions, and celery in a saucepan barely covering them with water and cook.
- In another saucepan mix your butter and flour together and then add your milk. Heat and stir it until it gets thick and add it to your potato mixture (water and all).
- Just before serving add in your cheese and salt and pepper to taste.
