Mahogany Cake and Chocolate Frosting

The actual name of the recipe is mahogany cake but to me it is the ultimate in chocolate cake recipes. It has been my favorite since I was a little girl, and now it is my daughter’s favorite.

One really nice thing about this cake is it forms a very thin layer on top that is very moist and makes it appear like it has been very lightly frosted. The rest of my family all likes it with frosting but my daughter and I prefer it without. I have included what I think is the best chocolate frosting instructions as well. This cake was always my choice for my birthdays.

Mahogany Cake

Ingredients:

  • 2 tablespoons of cocoa
  • 2 cups of sugar
  • 2 eggs
  • 1/2 cup butter or margarine
  • 3/4 cup of sour cream
  • 2 1/2 cups of flour
  • 1 cup on boiling water
  • 2 level teaspoons of baking soda
  • 1 teaspoon of vanilla

Directions:

Mix the first group of ingredients together (through the flour but stopping at the boiling water). Then add your two level teaspoons of baking soda to your boiling water, after you have mixed that well add it all to the batter. Then add the remaining ingredient the 1 teaspoon of vanilla to your batter and mix well.

Pour your batter into a greased and floured 9 x 11 pan and bake for 30 minutes at 350 degrees.

Chocolate Frosting

If you decide to frost your cake this is the best chocolate frosting recipe that I have ever found. It sets up every time and tastes really good.

Ingredients:

  • 2 cups of sugar
  • 2 rounded tablespoons of cocoa
  • 1 tsp of vanilla
  • 1 cube of butter or margarine (1/2 cup)
  • 1/2 cup of milk

Directions:

Mix all ingredients together and bring to a full boil. Boil for one minute. Fill your sink with cold water and place the pan in the cold water and stir constantly till it has cooled and is the right consistency to frost.
