Eat as much as you can – no really, that is the name of this quick recipe.

I suppose you could call this a casserole but with its spicy ingredients it isn’t what I normally think of when it comes to casseroles. You can make this as spicy as you like it by varying between mild and hot salsa and peppers. This recipe is a favorite for our family get togethers and we all enjoy it a lot.

How To Make:

Ingredients:

  • 16 ounce can of refried beans
  • 1 pound of lean hamburger
  • 1 medium onion
  • 1 8 ounce jar of salsa
  • 1/2 pound of grated Monterey Jack cheese

Directions

  1. Spread beans in bottom of casserole pan (I use a 10 x 13 glass pan). Cook hamburger, onions, and although this is optional I always add a small can of green chilies. Drain and spread over refried beans. Top with cheese and salsa.
  2. Bake at 350 degrees for 25 minutes.
  3. Serve with tortilla chips and/or warm tortillas.
