Well my recipe card says blueberry dessert, but I make it as a blueberry salad. But I guess you could consider it either one.
Ingredients:
- 3 small packages of raspberry jello
- 1 – 8 ounce package of softened cream cheese
- 1 cup coffee cream
- 1 cup sugar
- 1 envelope plain gelatin
- 1 teaspoon vanilla
- 1/2 cup nuts (I use walnuts)
- 1 can blueberry juice and fruit
Directions:
This side dish has 3 layers.
For the 1st layer dissolve 2 small packages of raspberry jello in 4 cups of hot water. Let set.
For the 2nd layer dissolve 1 envelope of plain gelatin in 1/2 cup of cold water and set aside. Heat 1 cup coffee cream and 1 cup of sugar together (do not boil) then pour it over dissolved gelatin and add one 8 ounce package of softened cream cheese, 1 teaspoon vanilla, and 1/2 cup of nuts. Pour over the first layer and let it set
For the 3rd layer dissolve one small package of raspberry jello in 1 cup of how water and add 1 can of blueberry juice and fruit. When it is cool pour over the 2nd layer and let set.
