I can remember my mom making this quite a bit when I was growing up. I was a bit of a picky eater but even I would go back for more porcupines. I liked it best when she made it with homemade rolls and a big garden salad. I find myself making it quite often for my own family.
How To Make:
Ingredients:
- 1 – 2 pounds of hamburger
- 1/2 cup uncooked rice (I use white)
- 3/4 cup milk
- 1 beaten egg
- 1 – 2 tablespoons of finely chopped onion
- salt and pepper to taste
- 2 cups of canned diced tomatoes (sometimes I add a little extra tomato juice)
Directions:
Mix all the ingredients together except the tomatoes and make them into small balls.
Brown them in a hot skillet.
Pour the tomatoes over and cook covered for about 45 minutes. (The rice will be popped out when they are done.)
